Tortilla Cake

Ok, so I don’t know where to find decent duck and I had no sausages. Instead I still had some ground turkey and I saw this tasty looking picture of a tortilla cake. Why not combine both things-this weeks recipe and tortillas? It worked like a charm.

Tortilla Cake with lots of vegetables

2 Shalots

2 garlic cloves

Ground turkey

Vegetable Broth

Crushed tomatoes

1/2 butternutsquash

2 Zucchinis

1 orange pepper

1 can white beans

Chili in Adobosauce

Salt, Pepper

Shredded cheese

1 cup yoghurt

Whole wheat tortilla

Tortilla Cake

Fry onion, garlic and turkey meat and then add the vegetables. Season to taste. Place baking paper in a round baking form. Start layering with a tortilla, add the meat vegetable mix and shredded cheese and then add a tortilla again. End layering with tortilla and top with cheese. Put in the oven at 175C for about 20-30min. Enjoy!

This time I made the challenge early hehe and we were eating it for 3 days! It was delicious and hubby loved it. I even had some leftever from the sauce and made some whole wheat gnocchis.

    Oh I have to try making a tortilla cake, sounds like a great idea. With this filling it is almost like a french lasagna

    This is definitely an original! Love the use of stuff in your fridge, I sometimes worry too much that it won’t turn out. But yours looks so yummy!
