<p>So das waere das erstmal letzte Gericht aus meiner Thaisammlung. Auf zu neuen Ufern und einer neuen Inspiration. <p>Wontons</p>
<p>Fuellung:<br />
Gehacktes<br />
Fruehlingszwiebeln<br />
Pilze<br />
1 Karotte kleingeschnitten<br />
Zuckerschoten kleingeschnitten<br />
3 EL Thai Sojasauce<br />
1 TL braunen Zucker<br />
1/2 TL Salz</p>
<p>Wontons:<br />
Wontonblaetter<br />
1 Ei gequirlt<br />
Oel zum frittieren<br />
Pflaumen- oder Chilisauce zum Dippen</p>

<p>Zubereitung:<br />
Gemuese und Gehacktes anbraten im Wok oder einer Pfanne. Sojasauce und Zucker dazugeben.<br />
Wontonblaetter mit 1 TL der Masse fuellen, Raender mit dem Ei bestreichen und diagonal umklappen.</p>
<p>Oel in der kleinsten Pfanne des Hauses geben und erhitzen. Die Wontons in kleinen Mengen ins Oel geben und fuer 3-4min brutzeln lassen. Das fertige Produkt auf Kuechenrollenpapier abtropfen lassen. Schoen warm halten und dann mit der Sauce nach Wahl servieren.</p>
<p>Mit den gekauften Wontonblaettern ist es so einfach, dass ich mich frage, warum ich das nicht frueher schon gemacht habe. Man kann seine Fuellungen endlos variieren oder einfach alle Reste aus dem Kuehlschrank kleinschnippeln und es wuerde schmecken. </p>
<p>Zudem habe ich noch Wontons in Wasser gekocht, so dass ich sie zu einer Suppe hinzugeben kann. Das erinnert mich an die Wor Wonton Soup, die ich mir immer in Cochrane beim Vietnamesen kaufe. Das totale Suchtmittel! Da bestelle ich schamlos zwei XL Suppen und freu mir ein Loch in den Bauch.</p>
<p><strong>Ehemanntauglich?</strong><br />
Ich war noch am Fotos schiessen, da verschwand der erste Wonton im Rachen meines Mannes. Ich denke, dass heisst ja.</p>
<p>Wontons</p>
<p>Filling:<br />
Minced pork<br />
scallions chopped<br />
mushrooms chopped<br />
carrot chopped<br />
snap peas<br />
3tbsp Thai soy sauce<br />
1tbsp brown sugar<br />
1/2tsp salt</p>
<p>Wontons:<br />
Wonton skins<br />
1 egg beaten<br />
vegetable oil for frying<br />
plum or chili sauce to serve</p>
<p>Fry the vegetables and the meat and then add soy sauce and sugar. Take a wonton skin and fill it with 1tsp of the vegetables. Brush the edges with the egg and fold diagonally. Deep fry the wontons in batches for 3-4min until golden brown. Drain on some paper towl.</p>
<p>Enjoy!</p>
<p>You can also boil them in water and then add them to your next soup. Which reminds me of the Wor Wonton Soup I buy in Cochrane from the small Vietnamese restaurant in XL. It is sooo good.</p>

<p>Amaretto Cookies<br />
In Anlehnung an Plain and Simple</p>
<p>Zutaten:<br />
2 cup Mehl<br />
1/2 cup Vollkornmehl<br />
3/4 cup Zucker<br />
1 Ei<br />
1 cup Butter<br />
1 TL Backpulver<br />
2 1/2 TL Amaretto (ohne Alkohol= 1/2 TL Mandelextrakt)<br />
1/2 geriebene Tonkabohne oder 1 Pck Vanillezucker</p>

<p>Ich liebe dieses Rezept, denn alles was man tun muss, ist alle Zutaten in eine Ruehrschuessel geben und vorsichtig durchmixen. Den Teig fuer ca. 30min in den Kuehlschrank geben und anschliessend zwischen 2 Schichten Frischhaltefolien ausrollen und gewuenschte Form ausstechen. Ofen auf 200 Grad vorheizen und Kekse fuer ca. 6-10min backen.</p>
<p><strong>Ehemanntauglich?</strong><br />
Es wurde nachgefragt, warum nur so wenig Kekse gebacken wurden. Ich hatte naemlich aus Zeitgruenden nur ein Blech backen koennen.</p>
<p>Amaretto Cookies<br />
Adapted from Plain and Simple</p>
<p>Ingredients:</p>
<p>2 cup cake flour<br />
1/2 cup whole wheat flour<br />
3/4 cup sugar<br />
1 egg<br />
1 cup butter, softened<br />
1 tsp. baking powder<br />
2 1/2 Tbsp. amaretto<br />
1/2 tonka bean grated or 1 tbsp vanilla extract</p>
<p>Combine all ingredients and beat at low speed, scraping side often, until well mixed. Let it chill until dough is firm enough to roll out. Preheat oven to 200 degrees. Roll out the dough between two plastic sheets and cut with a cookie cutter you fancy. Bake for 6 to 10 minutes, until edges are lightly browned.</p>

		<description><![CDATA[Nach langer Zeit der Abstinenz, was schwarzen Tee anging, hatte ich heute mal Lust auf eine Tasse. Da fiel mein Blick auf den Honig und Koriander Tee, der auch gut gegen Erkaeltung sein soll. Na, dann. <p>Nach langer Zeit der Abstinenz, was schwarzen Tee anging, hatte ich heute mal Lust auf eine Tasse. Da fiel mein Blick auf den Honig und Koriander Tee, der auch gut gegen Erkaeltung sein soll. Na, dann.</p>
<p>Baghdad Honey and Coriander Cold Remedy Tea<br />

<p>4 cups Wasser<br />
3 TL Koriandersamen<br />
6 schwarze Pfefferkoerner<br />
1 TL schwarzen Tee<br />
2 EL Honig<br />
1 EL frischen Limettensaft</p>

<p>Wasser kochen mit den Koriander and Pfefferkoernern. Tee, Honig und Limettensaft dazugeben und 5-7 ziehen lassen. Fertig.</p>
<p>Ich liebe Limette und mit dem Honig zusammen eine schoene Kombination. Allerdings werde ich beim naechsten Mal den Honig etwas reduzieren. Vielleicht nur 1 TL&#8230;mal sehen.<br />

Ehemanntauglich?</strong><br />
Das einzige Mal wo er Tee anruehrt ist, wenn es den gruenen Tee zum Sushi gibt.</p>

3 teaspoon coriander seeds<br />
6 black pepper corns<br />
1 tsp black tea<br />
2 tbsp honey<br />
1 tbsp fresh lime juice</p>
<p>Boil water with coriander seeds and pepper. Add the tea, honey and lime juice and let simmer for 5-7min. Drain and enjoy.</p>

<p>Vollkornspaghetti<br />
Wuerstchen- wir hatten Bratwuerstchen<br />
1/2 Zwiebel<br />
1 Zucchini<br />
1 gelbe Paprika<br />
Handvoll frische Champions<br />
Bund Fruehlingszwiebel<br />
Gemuesebruehe<br />
Tomaten aus der Dose<br />
Paprika, Cayennepfeffer, Pfeffer, ital. Kraeuter</p>

<p>Zwiebel und Wuerstchen in etwas Oel anbraten. Alles Gemuese hinzugeben und etwas anroesten lassen bevor die Fluessigkeiten und Kraeuter dazukommen. In der Zwischenzeit die Pasta al dente kochen. Ha! Bird wachte auf als die Pasta kochte. Puh, gerade noch so geschafft.</p>

<p>Whole wheat spaghettis<br />
Sausages<br />
1/2 onion<br />
1 zucchini<br />
1 yellow pepper<br />
Handful fresh mushrooms<br />
Springonions<br />
Vegetable broth<br />
Crushed tomatoes<br />
Paprika, Cayennepepper, Pepper, ital. herbs</p>
<p>Cook pasta according to package instructions. Fry onion in a pan and then add the rest of the ingredients. Adjust the herbs to your liking.</p>

<p>Jetzt, da eine grosse Lieferung Vanilleschoten bei mir eingetrudelt ist, komme ich auch auf den Trichter Vanillezucker selber herzustellen. Die ganzen amerikanischen Rezepte nehmen das fluessige Vanilleextrakt, aber ich muss zugeben, dass ich den Vanillezucker lieber mag. Ausserdem ist es super einfach selber herzustellen und deutlich billiger als das Zeug aus dem Supermarkt.</p>
<p>Zutaten:<br />
1 Vanilleschote<br />
2 cup Zucker<br />
1 luftdichter Kontainer</p>

<p>Vanilleschote aufschneiden und mit der Rueckseite des Messers das Mark auskratzen. Vanillemark und die Schote in den luftdichten Kontainer geben und einmal schoen durchschuetteln. Gerne auch dreimal um den Kuechentisch tanzen und schuetteln (siehe Lavendelzucker). Ich lasse es wohl ca. 2 Wochen durchziehen.</p>
<p><strong>Ehemanntauglich?</strong><br />
Der laechelt nur muede, wenn ich wie der kleine verrueckte Professor wieder in der Kueche herumexperimentiere.</p>
<p>Weiterhin kann man auch Lavendelzucker (<a href="http://prairiesummers.wordpress.com/2012/01/13/lavendelzucker/">Rezept Lavendelzucker</a>) oder Zucker und Zimt super einfach selbst herstellen. </p>
<p>Vanilla Sugar </p>
<p>Ingredients:<br />
1 vanilla bean, whole or scraped<br />
2 cups granulated sugar<br />
Airtight container to store</p>
<p>Slice down side of bean with back of knife and scrape seeds into airtight container with the sugar. Bury bean in sugar and seal tightly with lid. Let sit for 1 to 2 weeks. Enjoy! </p>
<p>Equally easy to make at home are lavender sugar (<a>Recipe Lavender Sugar</a>) or sugar and cinnamon. Don&#8217;t waste your money on storebought.</p>

<p>Ok, ok , das ist schon das zweite Rezept mit dem green Smoothie, aber ich habe ein Baby zu beaufsichtigen, dass gerade seine Stimme entdeckt hat. Egal, was andere sagen, den Spinat schmeckt ma nicht, wenn man die Zutaten richtig waehlt. Wenn man nicht gerade auf Diaet ist, kann man so tolle Sachen machen wie Vanilleeis zugeben oder einen ordentlichen Schuss Honig. Ich schmuggel mir dann immer Wheat Germ oder Flax seed mit rein, um es extra gesund zu machen. Ja, ich weiss, ekelig hihi.</p>

<p>Handvoll Spinat<br />
1 gefrorene Banana<br />
grosse Portion zerkleinerte Ananas mit Saft<br />
Mandelmilch- normale tut&#8217;s auch</p>
<p>Alles in der oben angegebenen Reihenfolge in den Mixer und anwerfen. Es darf gerne im Takt mit dem Hintern gewackelt werden. Gesund essen und sportliche Betaetigung in einem. Meine liegt darin, hektisch zwischen Mixer und Baby hin und herzurennen, weil das olle Teil superlaut ist und ich meinen Bird nicht unnoetig aufregen will.</p>
<p>Ehemanntauglich?</p>
<p>Ja, wenn ich ihn loswerden will, waere das die ultimative Waffe.</p>

<p>Fish Cakes<br />
In Anlehnung an Perfect Thai</p>
<p>Zutaten:<br />
450g weisser Fisch in Wuerfel geschnitten<br />
1 Eiweiss<br />
2 Limettenblaetter<br />
1 EL gruene Currypaste<br />
1 Chili kleingeschnippelt<br />
handvoll Koriander gehackt<br />
Salz und Pfeffer</p>

<p>Den Fisch mit dem Eiweiss, Limettenblaettern und der Currypaste in den Mixer geben und solange mixen bis eine weiche Masse entstanden ist. Salz und Pfeffer nach Geschmack. Koriander hinzugeben und mit feuchten Haenden kleine Burger formen. Die Burger fuer mind. 30min im Kuehlschrank kalt stellen.</p>
<p>Burger in eine Pfanne geben und solange anbraten bis sie leicht braun auf beiden Seiten sind. Aus der Pfanne nehmen und auf Kuechenpapier abtropfen lassen. Noch warm mit einer Dippingsosse nach Wahl servieren. Wir hatten Pflaumensosse daheim.</p>
<p><strong>Ehemanntauglich?</strong><br />
Zusammen mit der Sosse zum Dippen war der Ehegatte einverstanden und wird sie morgen zum Mittag mitnehmen. Ich habe Salz und Pfeffer dem Rezept zugefuegt, weil ich fand, dass das fehlte.</p>
<p>Fish Cakes<br />
Adapted from Perfect Thai<br />
Ingredients:<br />
450g white fish cut in small cubes (I used Tilapia)<br />
1 eggwhite<br />
2 Kaffir lime leaves<br />
1 tbsp green Currypaste<br />
1 Chili sliced finely<br />
handful of cilantro<br />
salt and pepper (optional)</p>
<p>Put fish, eggwhite, currypaste and lime leaves in a procesor until it is all smooth. Add cilantro and form little burger patties. Chill in the fridge for at least 30min. Fry them in a pan with some oil until they are lightly browned. Serve them warm with a sauce of your liking.<br />

<p>Zutaten:<br />
2 geroestete Knoblauchzehen<br />
Daumengrossesstueck Ingwer<br />
1 EL getrocknetes Zitronengras- frischer waere besser, aber hatte ich nicht in Haus<br />
1 TL Koriandersamen, zermahlen<br />
2 TL rote Thai Currypaste<br />
1 TL Tumerik<br />
1 cup Kokosnussmilch<br />
1 cup Mandelmilch<br />
250g Kartoffeln, kleingeschnitten<br />
1 kl. Packung Pilze<br />
1 grosse handvoll Spinat<br />
1 cup Gemuesebruehe</p>

<p>Knoblauch, Zitronengras und Koriandersamenin etwas Oel anroesten. Currypaste und Tumerik hinzugeben und dann mit der Kokosnussmilch und der Mandelmilch zum Kochen bringen. Die Kartoffeln in die Pfanne geben und mit Bruehe aufgiessen und ca. 15min kochen lassen oder bis Kartoffeln fast durch sind. Nun noch die Pilze und den Spinat dazugeben und mitkochen lassen.</p>
<p><strong>Ehemanntauglich?</strong><br />
Der wollte davon nichts haben, da es zuviele der Dinge enhaelt, die ihm nicht schmecken, wie frischer Spinat und Pilze. Dann bleibt mehr fuer mich uebrig hehe.</p>
<p>Potato and Spinach Yellow Curry<br />
Adated from Perfect Thai</p>
<p>Ingredients:<br />
2 cloves roasted garlic<br />
thumbsized ginger<br />
1 tbsp dried lemongrass- fresh would be better but I didn&#8217;t have it<br />
1 tbsp coriander seeds ground<br />
2 tbsp red Thai currypaste<br />
1 tbsp Tumeric<br />
1 cup coconutmilk<br />
1 cup almond milk<br />
250g potatoes cut in small pieces<br />
1 small box of mushrooms<br />
1 big handful of spinach<br />
1 cup vegetable broth</p>
<p>Roast garlic, lemongrass and coriander seeds in a bit of oil. Add curry paste, tumeric and coconutmilk and almond milk. Bring to boil before you add the potatoes and the broth until potatoes are almost done, approx. 15min. Now put the mushrooms and spinach in the pan and cook until wilted. Enjoy!</p>

<p>Natuerlich war ich neugierig und musste sie haben, grins.</p>
<p>Hier also mein erstes Rezept mit der beruechtigten Tonkabohne</p>
<p>Blaubeer-Ricotta Kuchen</p>
<p>Zutaten:<br />
•200g Ricotta<br />
•200g Zucker<br />
•240g Mehl<br />
•3 Eier<br />
•80ml Milch<br />
•1-2 EL Butter<br />
•Saft einer halben Zitrone<br />
•1 TL Backpulver<br />
•125g Blaubeeren<br />
•Halbe Tokabohne gerieben</p>

<p>In einer Schuessel Mehl und Backpulver mixen und zur Seite stellen. Den Ricotta und Zucker mischen und die Butter langsam hinzufuegen. Anschliessend die Eier unterruehren. Zum Schluss die Milch und den Zitronensaft zugeben. In kleinen Mengen das Mehl hinzufuegen und die geriebene Tonkabohne.</p>
<p>Backform einfetten und bemehlen. Teig in die Form geben und eingemehlte Blaubeeren auf dem Teig verteilen. Fuer ca. 30min bei 180 Grad backen.</p>
<p><strong>Ehemanntauglich?</strong><br />
Er hat zwei Stueck weggefuttert und hat als einzigen Vorschlag, etwas mehr Zucker in den Teig zu geben, also habe ich die Menge etwas angepasst.</p>

<p>Ingredients:<br />
• 200 gr ricotta<br />
• 150 gr sugar<br />
• 240 gr cake flour<br />
• 3 eggs<br />
• 80 ml milk<br />
• 1 tbsp of butter<br />
• Juice of 1 / 2 lemon<br />
• 1 tbsp baking powder<br />
• 125 gr blueberries<br />
• Half a tonka bean grated</p>
<p>In a bowl mix together the flour and baking powder and set aside.<br />
Mix ricotta and sugar and add the butter into small pieces and, slowly, the eggs. Mix well and when everything is just blended, add milk and lemon juice.<br />
Add the flour. Grease and flour the cake pan and pour the mixture.<br />
Lightly flour and arrange the blueberries on the dough.<br />
Bake at 180 degrees for 30 minutes.</p>
