This week Myreya picked this recipe. I took the liberty to change it a liiiiittle bit haha. I am a bit limited because I am not in my own kitchen. Although we go shopping a million times a week I somehow did not have all the ingredients at home.
Pasta Salad with a Red Pesto
Cooked pasta
Cabanossi sausages cut in pieces and fried with some sundried tomatoes, pepper and mini corncobs. Toss with the cooked pasta and some feta cheese cut in pieces.
For the red sauce mix some ground almonds with sundried tomatoes in oil and a handful of basil.
Toss everything and let it marinate for an hour or so. If you can wait that long. We had to try it after a couple of minutes…of course. One picture only because it was gone so fast. Tsk tsk tsk….
The recipe originally came from my husband’s sister Mandy. Thank you! And it was great seeing you! Birdie loves you and enjoyed playing with you, your hair and your jewely haha.

colourful pasta looks wonderful
Looks really good Jen!
sundried tomatoes and basil sauce… that sounds delicious! a simple and perfect pasta sauce! where did those mini corn cobs come from? are they fresh or from a can? i love them mini ones, but have never seen fresh ones.
Nice variation! Looks fantastic as a pasta sauce.
really interesting sauce! I’d be so curious to taste the ground almonds with the sun dried tomatoes.
That looks so delicious — I don’t blame you for chowing down on it right away!
