I am not a huge muffin fan because most recipes leave the muffinis dry and tough after one day. Not this one and it so nice and lemony. I added more lemon zest and juice because I did not have the lemon extract the original recipe called for. In addition, I always (yes always) go overboard when adding blueberries to recipes running the risk of making the dough too wet. So far I was lucky!
Lemony Blueberry Mini-Muffins
Adapted from Foodie with Family
(24 mini Muffins)
• 1/4 cup soft margarine
• 1/2 cup sugar
• 1 egg
• 1/4 teaspoon vanilla extract
• 3/4 cup all-purpose flour
• 1/2 teaspoon baking powder
• 1/4 teaspoon salt
• grated zest and juice of 2 lemons
• 1 /4 cup milk
• 3/4 cup of blueberries
Preheat the oven to 190C.
Line your mini muffin tin with the muffin liner. In a small mixing bowl, whisk together the flour, baking powder and salt and set aside.
In a stand mixer cream together the softened butter, sugar and lemon zest until light and fluffy. Add the egg and beat in the vanilla.
Add the flour mixture and the milk and lemon juice. Gently fold the blueberries into the cake batter. Fill the prepared muffin tins 2/3 full of batter. Tap the pan gently on the counter two or three times to settle the batter. Bake for 15-18minutes.

Ich muss ja gestehen, dass ich kein grosser Liebhaber von Muffins bin. Meistens sind die naemlich furztrocken nach einem Tag und superschwer. Ausserdem gibt es die hier an jeder Strassenecke, so dass ich irgendwie keinen Nerv hatte, sie nachzubacken. Das war, bis ich folgendes Rezept gefunden habe. So lecker mit Zitrone und Blaubeeren. Ich gehe allerdings immer crazy, wenn ich Blaubeeren in ein Rezept integriere. Die Gefahr besteht immer, dass ich es uebertreibe und der Teig zu matschig wird. Bisher hatte ich wohl Glueck!
Zitronen Blaubeer Mini-Muffins
In Anlehnung an Foodie with Family
Fuer 24 Mini-Muffins
1/4 cup weiche Margarine
• 1/2 cup Zucker
• 1 Ei
• 1/4 TL Vanille
• 3/4 cups Mehl
• 1/2 TL Backpulver
• 1/4 TL Salz
• Zest und Saft von 2 Zitronen
• 1 /4 cup Milch
• 3/4 cup Blaubeeren
Backofen auf 190C Grad vorheizen. Muffinfoermchen in die Form geben. In eine kleine Schuessel Mehl, Backpulver und Salz mischen. In einer grossen Schuessel Butter, Zitronensaft und Zest und Zucker mischen und schlagen bis es fluffig ausschaut. Dann das Ei dazugeben. Mehlmischund langsam hinzufuegen und anschliessend die Blaubeeren sanft unterheben. Teig in die Foermchen geben bis sie 2/3 gefuellt sind und das Backblech leicht auf die Kuechenplatte schlagen, damit sich alles setzt. Fuer 15-18min backen und anschliessend abkuehlen lassen…falls das geht haha.
Ehemanntauglich?
Der war erstaunlich begeistert und hat sich Muffins genommen, obwohl ich sie noch nicht freigegeben hatte, da das Foto noch fehlte. Wie ihr seht, hat es nicht geholfen.

What kind of muffin recipes are you using that they come out dry the next day?! Are you using German recipes? German recipes always come out dry for me and so I never bother. Just being honest.
They look delicious and I also always put in way too many blueberries. I normally at least double the amount in the recipe!
And to answer your question, we went to Greifswald and Stralsund on the way to Ruegen and stayed in Sassnitz (actually Mukran). Greifswald was so small and cute! Stralsund was also really, really nice. In Ruegen we did the chalk cliffs, U-boot museum, and ate lots of Frischbroetchen, but mostly we just walked around. It was sleeting and snowing during our day in Ruegen so we didn’t get to do much, but it seemed nice. I hope you have a nice trip!
